Rizopia's penne is a gluten-free pasta made from organic brown rice, and it is one of the rice pastas that actually holds its shape and bite when cooked al dente. The ridged, hollow tubes are the classic shape for thick sauces, baked pasta and cold pasta salads, because sauce clings to the outside and pools inside.

It is wheat-free, a source of fibre, kosher certified and made in Canada, with no preservatives. Cook it in plenty of well-salted boiling water, stir early so the pieces do not stick, and drain a minute before you think it is done; rice pasta keeps softening off the heat.
