Certified organic red beets, priced per unit as listed. Sweet, earthy roots that turn tender and jewel-coloured when cooked.

Trim off any greens and store the roots in the fridge, where they keep for weeks; cook the greens like chard. Roast whole beets in foil until a knife slides in easily, boil and slice them for salads, grate them raw into slaw, or pickle them.
