The original in The Fine Cheese Co. range: a thin, crisp cracker made with wheat flour and extra virgin olive oil, sprinkled with sea salt. Deliberately understated, so the cracker sets off the cheese rather than competing with it.

The maker pairs them with Pecorino or any hard cheese, but they work with just about anything on a board, from a soft goat cheese to a sharp aged Gouda. They also make a good base for a smear of butter and a slice of radish. Reseal the box after opening to keep them crisp.
