Stefano Faita Tuscan Minestrone Soup, 605 mL

Acquacotta, or cooked water, is the Tuscan idea of turning a few humble things into supper. Stefano Faita's version simmers diced Italian tomatoes, carrots, celery, kale, onions, garlic and white beans with extra virgin olive oil and spices. It is the one vegan soup in the range, with no preservatives, no artificial flavours or colours, no added sugar and no gluten.

It comes in a 605 mL glass jar. Heat it in a pot rather than in the jar, and refrigerate once opened, using it within seven days. Finish with a drizzle of good olive oil, or grated Parmesan if you are not keeping it vegan.
