They are cooked with a strip of kombu seaweed, Eden's traditional way of seasoning and softening beans.

Black eyed peas are medium, round and beige with a dark eye and a mild, earthy flavour. They are a Southern favourite and the centre of Hoppin' John, the New Year's dish folklore says brings good luck. Try them warm with greens and cornbread, or cold in a salad with tomatoes and herbs.
