Bob's Red Mill Xanthan Gum is a plant-based thickener and binder, and the ingredient that lets gluten-free baking hold together. In breads, cookies and cakes it stands in for the structure gluten would give, adding volume and keeping the crumb from falling apart.

It works as an emulsifier and thickener in dressings, sauces and smoothies too, helping liquids that do not normally mix stay together. You need very little per recipe, so a bag lasts a long time. Store it sealed and dry.
