Eden Ume Plum Vinegar is the ruby-red brine left from pickling umeboshi plums with sea salt and red shiso (beefsteak leaf), which gives it its colour. It is tart, salty and bright, more seasoning than vinegar, with 4.3% acidity and no artificial dyes, preservatives or chemicals.

Sprinkle a little on blanched or steamed vegetables, add it to salad dressings, marinades, hot sauce, salsa or dips, or use it to make quick pickles. Because it carries salt, go easy and taste as you go. Kosher and gluten-free, in an amber glass bottle with a dispenser cap.
