Susie Sans Gluten's chocolate cake mix bakes into a spongy, fudgy dark chocolate cake. The flour base is a blend of white and brown rice flours, potato and tapioca starches and sorghum flour, with cocoa, vanilla and the leaveners already measured in, so you just add the wet ingredients listed on the bag.
It is a generous mix: one bag makes two 6-inch cakes or 24 cupcakes. Bake it for a birthday, or split the bag between a small cake and a batch of cupcakes for the freezer. Gluten-free.
