Tahini is the sesame butter of the Middle East and Mediterranean, and it is essential for hummus and baba ghanoush. Beyond dips, whisk it with lemon and garlic for a salad dressing, drizzle it over roasted vegetables, or spread it on toast with honey. Stir it well before using, as the oil separates.
