Eden Organic Brown Rice Vinegar is made the slow way, using a method roughly a thousand years old. Organic brown rice, koji and spring water are blended, fermented outdoors in clay crocks and aged for eight months. The result is sweet, smooth and mellow at 4.5% acidity, with none of the sharpness of white vinegar.

It is the vinegar for sushi rice, and it does just as well in salad dressings, quick pickles, marinades and stir-fry sauces. Chefs tend to be loyal to it once they have used it. Comes in an amber glass bottle to protect the flavour.
