Chickapea's One Pot Tomato Curry is a boxed pasta dinner with a mild, dairy-free curry sauce. The spirals are made from yellow pea and chickpea flour rather than wheat, so a 71 g serving carries 14 g of plant protein and 4 g of fibre. The sauce mix blends tomato powder with turmeric, coriander, fenugreek, cinnamon, cumin, ginger and cardamom.

Boil the pasta, drain it, then stir in the sauce mix with about a third of a cup of milk or milk alternative. Coconut milk is the natural partner here. With a plant milk it stays fully dairy-free.
