Certified organic spaghetti squash, sold each. Under the pale yellow skin the flesh cooks into long strands that pull apart with a fork, which is how it earned its name. The flavour is mild and a little sweet.

A whole squash keeps for weeks in a cool, dark spot, so there is no rush to use it. Halve it, scoop the seeds, roast cut-side down until tender, then scrape out the strands and dress them like pasta with tomato sauce, pesto or just butter and parmesan.
