Sprouting changes the grain before it ever reaches the mill, and bakers like the flour for its mellow, slightly sweet flavour and fine texture, which behaves well in any recipe that calls for whole grain flour.

Use it one-for-one in recipes written for whole wheat flour: sandwich bread, pancakes, cookies, muffins and pizza dough. It also blends well with all-purpose flour if you want a lighter crumb. Keep it sealed in a cool, dry cupboard or the freezer.
