Crumble it over a Greek salad, roasted vegetables or a bowl of lentils, bake it with tomatoes and olive oil, or stuff it into peppers. Keep the block submerged in its brine in the fridge and it will last well after opening. It sits in our cheese fridge with the other Mediterranean cheeses.
