Bob's Red Mill's version has a mild flavour and a fine, soft texture, which makes it one of the easier gluten-free and grain-free flours to work with. It is Non-GMO Project verified and kosher, and the only ingredient is cassava.

Use it for tortillas, flatbreads, pancakes, cookies and quick breads, or to thicken sauces and coat things for frying. Because it absorbs more liquid than wheat flour, follow a recipe written for cassava flour rather than swapping it cup for cup. Keep the bag sealed in a cool, dry cupboard.
