A 250 mL bottle of balsamic vinegar from Acropolis Organics, the same small Greek-heritage label behind our Acropolis olive oils. It is a thin pouring vinegar, not a thick glaze, with the sweet-sharp taste of grape must behind the acidity.

Use it wherever you want a little brightness: whisk it with olive oil for a salad dressing, splash it into a pan of roasted vegetables, or finish a tomato and basil plate. A bottle lives happily in the cupboard and keeps well once opened.
