Schoolhouse Gluten-Free Cinnamon Raisin Bread, Half Loaf

Schoolhouse Gluten Free Gourmet's Cinnamon Raisin Bread is a sweet, lightly spiced variation on their Potato-Millet Bread, baked here in Atlantic Canada. It is a tall, moist loaf, studded with juicy raisins and scented with cinnamon, and it is yeast-free as well as gluten-free. Toast a slice and it fills the kitchen with the smell of fresh baking.

It contains lactose, but no nuts and no yeast. Use it for breakfast toast with butter, for French toast on a weekend, for bread pudding, or as a mid-afternoon slice spread with apple butter. This is a half loaf, a good size if you are the only one in the house eating gluten-free. Keep it in the fridge or freezer and toast from frozen.
