Organic diced sun-dried tomatoes are ripe tomatoes dried until chewy and concentrated, then cut into small pieces with a touch of salt. They are dry-packed rather than in oil, so there is no mess and they keep well. They are sold by weight from our bulk section.

Toss them straight into pasta sauces, soups and stews, where they soften as they cook, or soak them in warm water for ten minutes before adding to salads, grain bowls and focaccia dough. Blend the soaked pieces with olive oil and garlic for a quick pesto. Store them in a sealed jar in a cool, dry cupboard.
